Ingredients
(Serves 2–3)

6–12 fresh oysters on the half shell
3 tbsp salted butter, softened
1 clove garlic, finely minced (optional)
1 tsp lemon juice
1 tsp finely chopped parsley
Fresh cracked black pepper
Grated Parmesan (optional)
Lemon wedges, to serve

Instructions

Preheat the grill to medium-high heat.

Prepare the butter: Mix softened butter with garlic (if using), lemon juice, parsley, and black pepper.

Place oysters on the grill in their shells, making sure they sit flat so the juices don’t spill.
Add the butter: As they start to warm, spoon a small amount of the butter mixture into each oyster.

Grill 5–7 minutes until the butter bubbles and the oysters become plump and firm.
Optional: sprinkle a little Parmesan during the last minute.

Serve immediately with lemon wedges.
