Roasted Brussels sprouts tossed in a buttery maple glaze, finished with nutty sesame, gentle chili heat, bright lemon, and fresh pomegranate for a sweet-savory, crisp and vibrant dish. And matching Wines.

Ingredients
Serves 2 Persons

500 g Brussels sprouts
2 tbsp olive oil (or olive oil + mild sesame oil, 1:1)
2 tsp salt
1 small garlic clove, finely minced
¼ tsp chili powder
¼ tsp oregano
40 ml maple syrup
½ tsp chili flakes
1½ tbsp white sesame seeds
1½ tbsp butter
2 tsp apple cider vinegar
2 tsp lemon juice
1½ tbsp pomegranate seeds

Instructions

Preheat oven to 200 °C / 390 °F.

Trim and halve Brussels sprouts. Toss with oil, salt, garlic, chili powder, and oregano.

Spread on a lined baking tray, cut side down.
Roast 25 minutes until deeply golden.

Turn sprouts, add sesame seeds and chili flakes.
Roast another 8–10 minutes until crisp.

Gently melt butter, stir in maple syrup, apple cider vinegar, and lemon juice. Warm only.

Toss roasted Brussels sprouts with glaze.

Finish with pomegranate seeds and serve immediately.
