For the Sauce: 2 tbsp Oyster Sauce 1 tbsp Soy Sauce 1 tsp sugar 1/2 tsp of sesame oil. 1/4 cup of chicken stock, or water. For the Stir-Fry: ½ cup raw cashew nuts 2 tbsp vegetable oil 2-3 cloves garlic, minced. ½ onion, sliced. 1 bell pepper (any color), chopped. Optional: dried chilies. Optional: spring onions.Instructions: Marinate the Chicken: In a bowl, combine the chicken with soy sauce, cornstarch, and cooking wine. Mix well and let it marinate for at least 15 minutes. Prepare the Sauce: In a separate small bowl, whisk together oyster sauce, soy sauce, sugar, sesame oil, and chicken stock. Set aside.
