Slurp-Worthy 🦐Shrimp Ramen

Comforting, flavorful and perfect for a cozy meal

This Shrimp Ramen is a comforting, flavorful bowl featuring tender shrimp in a rich, aromatic broth infused with garlic, soy sauce, and miso. Fresh noodles soak up the savory umami, while colorful toppings, carrots, mushrooms, spinach, and sweet corn, add texture and freshness. Finished with a soft-boiled egg, green onions, sesame seeds, and cilantro, it’s simple to make yet deeply satisfying, perfect for a cozy weekday meal or a relaxed weekend treat. Perfectly matched with Sake and/or other beverages.

Ingredients
(Serves 2)

200g (7 oz) ramen noodles (fresh or dried)
200g (7 oz) large shrimp, peeled and deveined.
1 tablespoon sesame oil
3 cloves garlic, minced.
1 teaspoon grated ginger
4 cups (950 ml) chicken or vegetable broth
2 tablespoons Organic Tamari Sauce
1 tablespoon miso paste (preferably white or yellow)
1 teaspoon chili paste
A blend of a tablespoon of Organic Rice Vinegar with 1/2 teaspoon of brown sugar
Add additional Organic Rice Vinegar for taste if needed.

Toppings:
1 boiled egg, halved (optional)
1 small carrot, julienned
1 cup baby spinach or bok choy
1/2 cup sliced mushrooms (shiitake or button)
2 tablespoons chopped green onions.
1/4 cup corn kernels (fresh or canned)
1 teaspoon sesame seeds
Fresh cilantro or nori strips (for garnish)

Instructions:

Prepare the Broth:
In a large pot, heat sesame oil over medium heat. Add minced garlic and ginger for 1-2 minutes until fragrant.
Add the broth, soy sauce, miso paste, chili paste, and the vinegar sugar blend. Stir to dissolve the miso.
Bring to a simmer and let it cook for about 5-7 minutes to allow the flavors to meld together.

Cook the Shrimp:
Add the shrimp to the simmering broth and cook for about 2-3 minutes, or until they turn pink and are just cooked through. Remove the shrimp and set aside to prevent overcooking.

Cook the Noodles:
While the broth is simmering, cook the fresh ramen noodles or the packed ramen according to package instructions. in a separate pot. Drain and set aside.

Assemble the Ramen Bowls:
Divide the cooked noodles between two bowls. Ladle the hot broth over the noodles.
Add the shrimp, mushrooms, carrots, spinach, corn, and a boiled egg (if using).
Garnish with green onions, sesame seeds, cilantro, and nori strips.

Serve:
Drizzle a little extra sesame oil or chili oil on top for added flavor. Serve hot and enjoy your flavorful homemade Shrimp Ramen!
