If I could step back in time, I would go straight to Grandma’s kitchen for a comforting bowl of beef barley soup that brings back childhood memories. The gentle simmer on the stove, the warm aroma filling the kitchen, and the feeling of coming home on a cold day. Simple, hearty, and timeless, just like it was back then.

Ingredients (Serves 2)

200 g (7 oz) beef stew meat (chuck or shank), cut into small cubes.
70 g (⅓ cup) pearl barley
1 tbsp vegetable oil or butter
1 small onion finely chopped.
1 carrot, diced.
1 small potato, diced.
½ leek, sliced
1 clove garlic, minced (optional)
750 ml (3 cups) beef stock
1 bay leaf
½ tsp dried marjoram or thyme
Salt and freshly ground black pepper
Fresh parsley, finely chopped (for garnish)

Instructions

Rinse the pearl barley thoroughly under cold water and set aside.
Heat the oil or butter in a pot over medium heat. Add the beef and brown on all sides.
Add onion (and garlic if used) and sauté until translucent.
Stir in carrot, potato, and leek; cook for 2–3 minutes.
Add the barley, bay leaf, and marjoram. Pour in the beef stock.
Bring to a gentle boil, then reduce heat and simmer uncovered for 40–50 minutes, stirring occasionally, until the beef is tender and the barley is soft.
Season with salt and pepper. Remove the bay leaf.
Serve hot, garnished with fresh parsley.

Tips
If the soup thickens too much, add a little extra stock or water.
This soup tastes even better the next day as the flavors deepen.
Serve with rustic bread or dark rye bread.
